This is one of my go to Low Carb, Keto dinners for the fall and winter. Although its not pasta, it does satisfy the pasta craving, at least for me, without going into carb overload.
Spaghetti Squash Bake
2 medium spaghetti squash
1 lb ground beef
1/4 cup onion, diced
23 oz favorite marinara sauce
2 Cups shredded mozzarella cheese
Salt and pepper
Start by cooking spaghetti squash. Visit this post for step by step instructions on cooking the perfect squash!
Preheat oven to 375 degrees.
Meanwhile, in a medium frying pan, heat olive oil over medium-high heat. Add ground beef and onion and cook until no longer pink. Drain excess fat. Add marinara sauce and mix to combine.
Remove spaghetti threads from squash and add to a 9X13 baking dish. Add marinara mixture and mix to combine. Top with mozzarella and return to oven, cook for 20-30 minutes or until cheese is melted.
Slice casserole and serve.
