Kyle loves to joke that I never make sides with dinner, so I decided to change that with this delicious roasted broccolini. The perfect low carb, keto side dish to serve with any meal.
This is a side dish that will look fancy and only take minutes to prep and get into the oven!
2 bunches Broccolini
¼ cup Almonds, slivered
5 cloves garlic, peeled and whole
Parmesan cheese, grated
Preheat oven to 400 degrees.
Trim ends of broccolini and place on a baking sheet in a single layer. Add garlic cloves (whole) and almond slivers.
Drizzle broccolini, garlic and almonds with olive oil and season with pepper to taste.
Bake for 15-20 minutes. Once cooked, remove from oven, top with Parmesan cheese and serve!
