I am so excited about this low carb, keto, panchetta stuffed pistachio crusted chicken! This is the first thing I have made using the The Flavor Bible. I am in love with this book!! It gives you such amazing ideas for flavor combinations that I never would have thought of. I am so looking forward to making some new creations with this awesome new resource I have.
This recipe combines the nutty flavors from the pistachio, with salty pancetta and caramelized onion for a low carb, keto dish that is sure to “wow!”.
Pancetta Stuffed Pistachio Crusted Chicken
1 cup pistachios (I buy the bag with no shells)
½ onion, diced
5oz Pancetta, diced (I buy the package where it’s already cut up into little cubes)
6oz cream cheese, room temperature
½ cup parmesan
4 chicken breasts
Preheat oven to 400 degrees.
Place pistachios in a large bag and crush them with a rolling pin or the flat size of a meat tenderizer until they are your desired consistency (I went for more of a bread crumb size, although some turned out larger than others!). Empty the pistachios into a shallow bowl and set aside.
In a medium pan over medium heat, melt butter. Add onion and sauté until they become a nice caramel color (about 8-10 minutes). Once caramelized, remove and set aside. Add pancetta to the pan and cook until crispy.
In a medium size bowl, mix together cream cheese, onions, pancetta and parmesan and set aside.
Next, Butterfly the chicken breasts and stuff each with 1/4th of the cream cheese mixture. For more information on how to butterfly chicken breast, click here.
Once the chicken breasts are stuffed, place them one by one into the bowl of pistachios turning the breast so it is coated evenly on both sides. Once well coated, place the chicken breast into a 9×13 baking dish. Repeat until each breast is coated in pistachios and in the baking dish.
Place baking dish in the oven and bake for 30-45 minutes (Note: cooking time may vary based on thickness of your chicken breasts). Once cooked, remove and allow to rest for 5 minutes before serving, this keeps the chicken juicy and lets the cheese cool slightly before you dig in!
