This Keto Mexican Chicken Skillet is the perfect quick and easy week night meal. It came to me when I was in a hurry one night – why not just throw everything in a pan and see what happens!
The result, it was delicious! And the best part was it can all be done in ONE PAN! Who doesn’t love an easy Keto one pan dinner?!

The other great part about this Mexican Chicken Skillet it that it is super easy to scale up or down, so whether you’re cooking for one or six, its easy to accommodate everyone.
You can even spice this Keto Mexican Chicken Skillet up for your non-Keto friends by adding rice or beans on the side and keep it Keto for yourself!

One Pan Mexican Chicken Skillet
Ingredients
- 4 Chicken Breast
- 1 Red Pepper Cored and Sliced Lengthwise
- 1 Green Pepper Cored and Sliced Lengthwise
- 1 Yellow Pepper Cored and Sliced Lengthwise
- 1 Yellow Onion Sliced
- 2 Tbsp Taco Seasoning
- 1 1/2 Cup Salsa
- 1 1/2 Cup Shredded Taco Cheese
- 2 Tbsp Olive Oil
Instructions

Preheat oven to 375 degrees.

In an oven safe skillet (I used my cast iron), add 1 Tbsp olive oil and heat over medium high heat.

Once hot, add peppers and onion and cook until peppers begin to blister, about 5-7 minutes. Once cooked, remove and set aside.

Next, season both sides of the chicken breasts with 2 Tbsp of Taco seasoning, distributing it evenly between the 4 breasts.

Add remaining 1 Tbsp of olive oil to the pan, once hot, add the chicken.

Allow the chicken to sear on both sides, about 2-4 minutes per side.

Once seared, remove from heat and add the peppers and onion mixture back to the pan. Top with salsa and place into the oven.

Bake for approximately 30-45 minutes until the chicken reaches 165 degrees (note: cooking time will vary depending on the thickness of your chicken). Half way through the cooking process, remove and top the chicken mixture with cheese.

Once the chicken has reached 165 degrees, remove and serve with your favorite toppings!
