Well, its that time of the year…. TIME FOR THE SUPER BOWL! So, I thought its time I post my recipe for the easiest mini stuffed peppers that you and your friends are sure to enjoy while you watch all your favorite super bowl commercials (if you’re like me that is, I find the commercials more fun than the game!) .
These mini stuffed bell peppers fit within a keto or low carb diet, making them perfect appetizer to bring to any party.
Mini Stuffed Bell Peppers
1 bag mini bell peppers
1lb ground beef
1/2 packet taco seasoning
1 – 1 1/2 cups Mexican shredded cheese
1 tbsp olive oil
Preheat oven to 350 degrees.
Add 1 tbsp olive oil to a medium size pan over medium heat. Add ground beef and cook until no longer pink. Once cooked through, add taco seasoning (only half the packet) and mix to combine.
Next, cut mini peppers in half lengthwise. Core and seed each pepper using a soon.
Place the peppers on a baking sheet, inside facing up. Fill each pepper with 1/2 to 1 tablespoon of beef mixture, depending on size of the peppers.
Lastly, top each pepper with cheese.
Bake peppers for 20 minutes.
Serve with a side of guacamole!
