
I’m not a hug desert person when I’m eating at home, so I never really felt the need to make Keto friendly desserts.

However – I am a fan of ice cream, especially in the summer! Halo Top and Enlightened were two low carb ice cream brands that I would have on hand for when the ice cream craving would hit.
while I liked both of those brands, I couldn’t help but feel like something was missing. They were just a little more watered down to me than I regular old ice cream.
So, a few weeks ago I gave Keto ice cream a try, starting with a pistachio flavor. It turned out so well, I thought why not give vanilla a try!
So here it is, my deliciously easy, low carb ice cream!

Keto Vanilla Ice Cream
Ingredients
- 1 Cup Unsweetened Almond Milk
- 2 Cups Heavy Whipping Cream
- 3/4 Cup Granular Swerve or other low carb sweetener
- 1 tspn Vanilla Extract
Instructions

In a bowl medium/large bowl, add almond milk and swerve. Using a hand mixer, mix together until swerve begins to dissolve on low.

Once mixed, add in heavy cream and vanilla extract and mix to combine. Cover and place in the fridge for 2 hours, minimum.

After chilled, add the contents of the bowl into an ice cream maker and mix for 15-20 minutes.

If the ice cream appears too liquidy for your liking, empty the ice cream into an air tight container and place in the freezer for 1-2 hours (I generally freeze mine after mixing)
