
If I’m being totally honest, I lived off pasta my junior and senior year of college. And that is not even an exaggeration, I mean I ate it every single night! During that time, one dish that I learned to make and love was Penne alla vodka.
Now that we are Keto, we cant really do the Penne part anymore, so I thought why not come up with a Keto friendly/ low carb option using the same vodka sauce that I know and love.
So, this is where this dish comes in! While this is a low carb option, this would still pair perfectly with pasta for your carb loving friends and family, however I might consider doubling the sauce to make sure you have enough to coat the pasta.
Another option would be to serve this over zoodles or another low carb noodle alternative!
However you chose to serve it, this will be a crowd pleaser!


Keto Chicken with Vodka Sauce
Ingredients
- 1 Lb Chicken Breast Cubed
- 1 Bell Pepper Thinly sliced
- 2 Handfulls Spinach Roughly chopped
- 3 Oz Tomato Paste
- 3/4 Cup Heavy Cream
- 1/4 Cup Vodka
- 2 Large Leaves of Basil Slivered
- 1 Clove Garlic Minced
- 3/4 Cup Parmesan Cheese Shredded
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
- Red Pepper Flakes To taste
- Salt To taste
- Pepper To taste
Instructions

In a medium size saucepan over medium heat, add one tablespoon of olive oil. Once the pan is hot, add the peppers and saute about 5-10 minutes until the skin of the pepper begins to char. Once done, remove from pan and set aside.

Next, add remaining tablespoon of olive oil to the pan and increase heat to medium high. Add diced chicken and cook until done, about 5-10 minutes, depending on the size of the pieces. Once cooked, remove from pan and set aside.

In a small bowl, dissolve the tomato paste into the vodka, stir until smooth and set aside to be added to the sauce.

Reduce heat on pan to medium low and add butter and minced garlic. Cook until garlic is fragrant, about a minute or two.

Next, add the cream to the pan and stir to combine the cream and butter.

Once the cream and butter are combine, add the tomato paste and vodka mixture, basil, Parmesan cheese, red pepper flakes, salt and pepper. Cook until most of the alcohol has evaporated and this sauce has thickened, about 5 minutes.

Lastly, add in chicken, red peppers and spinach, mix to combine. Cook a few additional minutes until spinach has wilted and the dish is ready to be served!
