I love this dish because it’s easy and only requires one pan! Kyle and I like to incorporate sweet potatoes when looking for a carb up. Those of you doing strict Keto, replace the sweet potatoes with another type of veggie like cauliflower or sweet peppers.
Before Kyle and I moved in together he ate chicken and sweet potatoes EVERY SINGLE DAY! He would make a huge batch on Sunday and just reheat it throughout the week. As you can imagine, he was excited to get a little more variety in his weekly dinners when he moved in. Ha! When I suggested this skillet, he really couldn’t contain his excitement over the sweet potatoes, which I find hilarious.
Many were skeptical over this dish, with the mixture of sweet potato and tomato sauce, but it turns out the flavors all work together perfectly!
Sausage and Sweet Potato Skillet
3-4 cups sweet potato peeled and diced (about 2-3 sweet potatoes)
1 1/2 cups favorite marinara
Half a medium sized onion, diced
1 clove garlic, minced
1lb sweet Italian sausage, casings removed
1 1/2 cups Mozzarella
Preheat oven to 400 degrees.
Heat olive oil in oven safe skillet (I used cast iron) over medium heat. Add diced sweet potatoes and cook, stirring occasionally, for 15-20 minutes or until tender. Once cooked, remove sweet potatoes from the skillet and set aside.
Add onion and garlic to skillet and cook until fragrant, about a minute or two. Next, add sweet Italian sausage and cook through until no longer pink.
Return sweet potatoes to skillet with sweet Italian sausage mixture. Add marinara and stir to combine. Top with mozzarella.
Place skillet into the oven and cook for 10-15 minutes, or until cheese is melted. Remove from oven and serve.
