This soup is perfect for the summer, so light and refreshing but still filling. I had never made a chilled soup before, but after having some at a local restaurant, I thought why not give it a try! Sometimes I just want soup in the summer, so having this cold option available is awesome!
This soup also sounds and looks fancy, although it’s super easy to make! Just get all the ingredients ready and throw it in the food processor. Once the ingredients are well mixed, they just need to chill in the refrigerator before serving!

Chilled Avocado and Crab Soup
Ingredients
- 2 Avocados Cut into cubes
- 1/2 Cucumber Skin peeled and cut into slices
- 1 Clove Garlic Peeled
- 3/4 Cup Heavy Whipping Cream
- 2 Cups Vegetable Stock
- 1 Tbsp Lime Juice
- Salt and Pepper to Taste

Place all ingredients with the exception of the cream into the food processor. I put mine on high and mixed until smooth. Once well mixed, turn the food processor to low and slowly add the cream until it is well combine.

Pour the soup into a large bowl. If you find that the soup is no as smooth as you were hoping for, strain the soup through a strainer first to catch any lumps!

Cover the bowl with plastic wrap and place the soup in the refrigerator for one hour.

Once chilled, spoon the soup into a blow and top with desired amount of crab meat and serve!!
