One of my favorite appetizers to bring to parties before Keto was Spanakopita. Besides that deliciously flaky filo dough (I could drool thinking about it!) I love the flavors of feta and spinach together.
In thinking about how much I love this appetizer, I thought why not make it into a simple Keto Friendly dinner where we could enjoy those same flavors. That’s where I came up with this chicken in a feta cream sauce.
It’s easy, its low carb, it has minimal clean up, what’s not to love?!
I had originally made this recipe as a hassle back chicken breast, stuffed with the feta, spinach and onion mixture and backed the chicken. But I found this sort of dried out the chicken.
Next I thought, let’s fix that by making chicken, seared in a pan, topped with a feta cream sauce. And boy was this chicken in a feta cream sauce a hit!
Kyle loved it so much more than my first crack at this recipe and so did I.
This is a one pan dish – meaning it is perfect for those busy week night where you don’t want a million dishes to clean up once you’re done cooking and could be done in 30 minutes!
So with that, I hope you love this recipe as much as we did!
Chicken in a Feta Cream Sauce
- 2 Chicken Breasts
- 1/2 Cup Onoin Minced
- 2 Cloves Garlic Minced
- 2-3 Handfuls Spinach Roughly Chopped
- 3/4 Cup Feta Cheese
- 3/4 Cup Heavy Whipping Cream
- 1 Tbsp Butter
- 1 Tbsp Olive Oil
- Salt & Pepper to Taste
In a medium pan over medium high heat, add 1 Tbsp Olive Oil.
Season chicken with salt and pepper. Once the pan is hot, add the chicken breasts to the pan and sear until done and no longer pink inside. Cooking time depends on the thickness of your chicken breasts. I generally use thin breasts and cook for about 5 minutes per side.
Once the chicken is cooked through, remove from the pan and set aside.
Lower pan to medium low and add the butter and onion and cook until translucent.
Next, add garlic and cook an additional 2-3 minutes until fragrant.
Add the feta and cream and mix until feta has melted.
Add the spinach and cook until wilted, about 3-5 minutes.
Slice the chicken breasts horizontally into pieces and place on a serving dish. Top the chicken with the feta cream mixture and serve.
