A healthier adult version of your favorite childhood comfort food! Swap out the noodles with cauliflower to keep this low carb and add chicken to pack it with protein.
This is a twist on one of our favorite cauliflower mac n’ cheese recipe by Peace, Love and Low Carb. The original recipe had little protein, which Kyle was not a fan of. So, I incorporated chicken, some different cheese and spices and created our new favorite keto mac n’ cheese! I also like to think of this as a healthier adult twist to your average mac and cheese as it leaves out the noodles, replaced with cauliflower!
Chicken & Cauliflower Mac n’ Cheese
1 large head cauliflower
1/2 medium onion, diced.
2 chicken breasts, shredded
4 slices prosciutto, cut into small pieces
1 cup sharp cheddar, grated (plus a little more for topping)
1 cup gruyere, grated
1 cup cream
1/4 tsp garlic powder
1/4 tsp nutmeg
2 tbsp. olive oil
2 tbsp. butter
Salt and pepper to taste
To shred the chicken, I cooked it in the crock pot for 2-3 hours on high, depending on the thickness with enough chicken stock to cover the bottom of the crock pot. Once cooked, shred with a fork.
Preheat oven to 350 degrees.
Fill a large pot with lid with 1 inch of water and place over medium high heat. Cut the florets off the cauliflower and add them to the pot of water. Cook until tender, about 10-15 minutes. Once cooked, drain the cauliflower and return them to the warm pot. This helps remove excess water from the cauliflower.
In a large pan over medium heat, melt butter and olive oil. Once melted, added diced onion to the pan and sauté until they become caramelized (a nice brown color); remove and set aside.
Next, add prosciutto to the pan and cook until crispy. Remove and set aside.
In the same pan, add cream, Cheddar, gruyere, nutmeg, garlic powder, add salt and pepper to taste. stir until cheese is melted and reduce to low to allow the sauce to thicken for about 5 minutes.
While the sauce thickens, add the cauliflower to a 9×13 baking dish and mash the cauliflower with the back of a fork to break it into smaller pieces. Added shredded chicken.
Once the sauce has thickened, pour it into the baking dish over the cauliflower and chicken. Mix to combine.
Lastly, top with caramelized onion, prosciutto and extra cheddar if desired.
Bake for 15 minutes and serve!
