I don’t usually write blog posts on Sunday’s. I far prefer to lay in bed as long as possible until our dog Daisy forces me to get up and go for a walk.
This morning however, the mood struck! And for me, if I’m in the mood, I better hurry up and get writing because it doesn’t always last long, haha!
So this morning, as I was scrolling through my feed, I came across a picture of this Avocado Caprese Salad that I had made during the summer last year. This salad is so easy, seriously, done in about 15 minutes! Yet delicious so I thought I should get it up on the blog for you all to enjoy this summer, since it is right around the corner!
This Avocado Caprese Salad is quick, easy and refreshing. While this salad is low carb and Keto Friendly, it is also one that your non-Keto friends will love!
If this is a recipe that you would like to make ahead, I would suggest prepping all of the ingredients with the exception of the avocado. Add the avocado just before serving to keep it from turning brow – no one likes a brown avocado!
Avocado Caprese Salad
- 1 Avocado diced
- 1/2 Cup Mozzarella pearls
- 1 Cup Cherry Tomatoes Sliced in half, lengthwise
- 1 Tbsp Fresh Basil Thinly Sliced
- Balsamic dressing to taste Any balsamic will do, I use a creamy balsamic
- Salt and Pepper to taste
In a medium bowl, add the diced avocado, fresh mozzarella pearls, sliced tomatoes and basil.
Season with salt and pepper.
Top with desired amount of balsamic dressing and mix to combine, then serve!
